A Story Served From My Heart | Bombay Fifty

Bombay Fifty didn’t begin as a restaurant; it began as a memory. A feeling. A childhood moment that stayed with me quietly until it grew strong enough to become a dream.

When I look back, the earliest and most cherished memory I have is of sitting on my mother’s kitchen counter. I was a small boy then, legs dangling, curiosity bubbling over with every sound, every aroma, every crackle of cumin in hot oil. My mother would move around the kitchen with such ease and grace, turning simple ingredients into something magical. And I wide-eyed and full of endless questions would ask her about everything. Why the onions needed to caramelize just right, why the rice was washed a certain way, and how she knew the spices were “ready.” She never once seemed tired of explaining it all. Cooking was her love language, and teaching me was her way of passing that love forward.

Those moments shaped me in ways I didn’t understand then. They taught me that food isn’t just food it’s comfort, emotions, and memories. It is what brings people together, what makes friends out of strangers, and what turns an ordinary day into something worth remembering.

Growing up in Dubai in the early 80’s meant growing up in a vibrant mix of cultures. I had friends from every corner of the world, each carrying flavors from their own homes, their own traditions. The city felt like an open invitation to taste, learn, and share. Even as a child, I could see how a single plate of food could tell a story, carry a culture, or heal a tired heart. That understanding followed me everywhere; it became the backbone of the way I cooked.

But if Dubai taught me diversity, Bombay gave me soul. I was born there, and no matter how many years pass, the flavors of Bombay remain etched in my mind: the spirited street vendors, the chaotic lanes filled with sizzling pans and bold spices, the irresistible aroma of fresh food drifting through busy markets, and the warmth of homely gravies simmering for hours. Bombay’s energy, its unapologetic love for food, and its fearless play of spices all of that became a part of who I am.

Years later, when I found myself hosting dinner gatherings for friends in Dubai, that same spirit came to life in my kitchen once again. What began as casual dinners grew into something far more meaningful. Friends told other friends. And soon, I was serving not a few plates, but entire pots, especially of biryani, always biryani. Bombay Fifty became more than a kitchen it became a bridge between two homes, blending the soul of Bombay with the spirit of Dubai. Bombay Fifty also happens to be the Pincode of an area in Bombay where i was born and where my family home is.
